The presence, detection and elimination of anisakis in seafood is one of the challenges faced by the fishing sector in terms of food safety and marketing. Now, a new analysis developed by the Biobank Technical Unit of the Marine Research Institute (IIM) of the CSIC has concluded that its presence in cephalopods is “invaluable” and “not comparable to other species”. At least in those commercialized by the Galician fishing company Profand.
The results of the research are part of a joint initiative with Grupo Profand, with the aim of implementing a predictive and cognitive inspection system for risks associated with anisakis and other zoonotic parasites in cephalopods that strengthens consumer guarantees of their complete safety. octopus, cuttlefish, squid and squid products that the fishery sells exclusively in Mercadona.
As a first step in the system developed by the CSIC, the inspection of parasites has been strengthened through the self-monitoring of products in all the subsidiaries of the Profand Group. This has made it possible to establish a reliable chain to carry out scientific study and improve the company’s quality processes.
Subsequently, the CSIC analyzed the results obtained in the surveillance phase, concluding that the presence of anisakis and other zoonotic parasites is “negligible in the Profand Group cephalopods marketed exclusively by Mercadona in Spain”. Finally, and as part of the program designed to strengthen the policy of continuous improvement of the self-control and traceability systems of Grupo Profand products, the CSIC implemented a training program (blended learning), which combines e-learning and face-to-face meetings, to increase the internal training of the company’s technical staff and ensure that the new staff follow the established quality standards.
